Total Time: 55 mins
Cuisine: American
Serves: 1 cake

Ingredients

  1. 1 3/4 cups all-purpose flour
  2. 1 1/2 cups sugar
  3. 3/4 cup unsweetened cocoa powder
  4. 1 1/2 teaspoons baking powder
  5. 1 1/2 teaspoons baking soda
  6. 1 teaspoon salt
  7. 2 large eggs
  8. 1 cup whole milk
  9. 1/2 cup vegetable oil
  10. 2 teaspoons vanilla extract
  11. 1 cup boiling water
  12. 1/2 cup butter, softened
  13. 2/3 cup unsweetened cocoa powder (for icing)
  14. 3 cups powdered sugar (for icing)
  15. 1/3 cup milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.
  2. In a large mixing bowl, combine the all-purpose flour, sugar, unsweetened cocoa powder, baking powder, baking soda, and salt. Whisk the dry ingredients together until well combined.
  3. In another bowl, beat the two large eggs. Then add the whole milk, vegetable oil, and vanilla extract to the eggs. Mix well until all the wet ingredients are combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Mix on medium speed using an electric mixer for about 2 minutes until the batter is smooth and well combined.
  5. Carefully stir in the boiling water. The batter will be thin, but this is normal. Make sure everything is well mixed.
  6. Divide the batter evenly between the prepared cake pans. Tap the pans gently on the counter to remove any air bubbles.
  7. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Once done, remove the cakes from the oven and let them cool in the pans for about 10 minutes.
  8. After 10 minutes, carefully remove the cakes from the pans and transfer them to a wire rack to cool completely.
  9. While the cakes are cooling, prepare the icing. In a medium bowl, combine the softened butter and unsweetened cocoa powder. Mix until smooth and creamy.
  10. Gradually add the powdered sugar, alternating with the 1/3 cup of milk, mixing until the icing reaches your desired consistency. Beat until fluffy and well combined.
  11. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of icing on top of the first layer.
  12. Carefully place the second layer on top of the first. Use the remaining icing to frost the top and sides of the cake, smoothing it out with a spatula.
  13. For a decorative touch, you can sprinkle some chocolate shavings or cocoa powder on top of the icing if desired.
  14. Slice and serve your delicious Special Fudge Cake. Enjoy!

Tips

  1. Ingredient Temperature Matters: Ensure eggs and milk are at room temperature for smoother batter mixing.
  2. Don't Overmix: Mix cake batter just until ingredients are combined to keep the cake tender.
  3. Boiling Water Secret: The thin batter with boiling water creates an incredibly moist cake - trust the process!
  4. Cooling is Crucial: Allow cakes to cool completely before frosting to prevent icing from melting.
  5. Icing Consistency Tip: Add milk or powdered sugar gradually to achieve the perfect spreadable texture.
  6. Storage Hack: Store cake in an airtight container at room temperature for up to 3-4 days to maintain freshness.
  7. Optional Enhancements: Consider adding a splash of coffee or espresso to intensify the chocolate flavor.
