Prep Time: 20 mins
Cook Time: 45 mins
Total Time: 1 hrs 5 mins
Cuisine: American
Serves: 8 servings

Ingredients

  1. 2 cups all-purpose flour
  2. 1 ½ cups granulated sugar
  3. 1 cup unsweetened cocoa powder
  4. 1 ½ teaspoons baking powder
  5. 1 ½ teaspoons baking soda
  6. 1 teaspoon salt
  7. 2 large eggs
  8. 1 cup milk
  9. ½ cup vegetable oil
  10. 2 teaspoons vanilla extract
  11. 1 cup boiling water
  12. Mickey Mouse cake topper
  13. Red and yellow fondant

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent the cake from sticking.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt. Whisk the dry ingredients together until they are well blended.
  3. In another bowl, beat the two large eggs. Add the milk, vegetable oil, and vanilla extract to the eggs, and mix until fully combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until everything is well incorporated and smooth.
  5. Slowly stir in the boiling water. The batter will be thin, but this is normal.
  6. Pour the batter evenly into the prepared cake pans, ensuring they are filled equally to promote even baking.
  7. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, carefully transfer the cakes to a wire rack to cool completely.
  9. While the cakes are cooling, prepare the frosting of your choice (buttercream or cream cheese frosting works well). You can also prepare the red and yellow fondant if you plan to decorate the cake with it.
  10. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a layer of frosting on top of this layer.
  11. Place the second cake layer on top of the frosted first layer. Use the remaining frosting to cover the top and sides of the entire cake, smoothing it out with a spatula.
  12. Roll out the red and yellow fondant to create decorations for your cake. You can cut out shapes or create Mickey Mouse ears to place on top of the cake.
  13. Once decorated, place the Mickey Mouse cake topper on the top of the cake to complete the look.
  14. Slice the cake into 8 servings and enjoy your Disney Mickey Mouse Clubhouse Cake!

Tips

  1. Use room temperature ingredients to ensure a smoother, more consistent batter
  2. Don't overmix the cake batter - this can lead to a tough, dense cake
  3. Check cake doneness by inserting a toothpick - it should come out clean with just a few moist crumbs
  4. Allow cakes to cool completely before frosting to prevent melting
  5. Use a cake turntable for smoother frosting application
  6. Chill the cake for 15-20 minutes after initial frosting to set the crumb layer
  7. Work with fondant when it's slightly warm for easier molding and shaping
  8. Have fun and don't stress about perfection - the joy is in creating memories!
