  8. Fresh cilantro leaves

Instructions

  1. Prepare all ingredients by washing and chopping vegetables: shred lettuce, julienne carrots and cucumber, and roughly chop fresh mint and cilantro leaves.
  2. Cook vermicelli noodles according to package instructions. Drain and rinse with cold water to stop cooking, then set aside to cool.
  3. In a skillet over medium-high heat, cook ground pork sausage until fully browned and no pink remains. Break meat into small crumbles while cooking. Drain excess fat and let cool slightly.
  4. Fill a large, shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable.
  5. Lay the softened rice paper on a clean, damp kitchen towel. Arrange a small handful of lettuce in the center of the wrapper.
  6. Layer cooked vermicelli noodles, julienned carrots, cucumber, and browned sausage on top of the lettuce.
  7. Sprinkle fresh mint and cilantro leaves over the filling.
  8. Carefully fold the bottom of the wrapper up and over the filling, then fold in the sides, and roll tightly to create a compact summer roll.
  9. Repeat the process with remaining wrappers and ingredients.
