Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Cuisine: Italian
Serves: 6 servings

Ingredients

  1. 1 lb ground beef
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 1 can diced tomatoes
  5. 1 can kidney beans
  6. 1 can cannellini beans
  7. 2 cups chicken broth
  8. 1 tsp Italian seasoning
  9. 8 oz pasta

Instructions

  1. Prepare all ingredients by chopping onion, mincing garlic, and draining and rinsing the beans.
  2. Set Instant Pot to Sauté mode. Add ground beef and cook until browned, breaking it into small crumbles, approximately 5-6 minutes.
  3. Add chopped onions and minced garlic to the browned beef. Sauté for 2-3 minutes until onions become translucent and fragrant.
  4. Stir in diced tomatoes, kidney beans, cannellini beans, chicken broth, and Italian seasoning. Mix ingredients thoroughly.
  5. Cancel Sauté mode and secure Instant Pot lid, ensuring valve is set to sealing position.
  6. Set Instant Pot to Manual/Pressure Cook mode on High Pressure for 4 minutes.
  7. Once cooking cycle completes, perform a quick release of pressure.
  8. Open lid and stir in dry pasta, ensuring it's submerged in liquid.
  9. Close lid and cook on High Pressure for an additional 4-5 minutes until pasta is al dente.
  10. Allow natural pressure release for 2-3 minutes, then quick release remaining pressure.
  11. Open lid, stir contents, and let sit for 2-3 minutes to thicken slightly.
  12. Serve hot, optionally garnishing with grated Parmesan cheese and fresh parsley.

Tips

  1. For maximum flavor, ensure you brown the ground beef thoroughly before adding other ingredients. This develops a deep, rich base for your dish.
  2. Use freshly minced garlic instead of pre-chopped for a more vibrant taste. The difference in flavor is remarkable!
  3. Make sure your pasta is fully submerged in liquid when adding it to ensure even cooking.
  4. Don't skip the natural pressure release at the end – it helps the pasta absorb remaining liquid and achieve the perfect texture.
  5. For a lighter version, you can substitute ground turkey or plant-based meat alternative without compromising taste.
  6. Garnish with fresh parsley and grated Parmesan cheese just before serving to elevate the presentation and add an extra layer of flavor.
