Ingredients

  1. Kartoffeln
  2. Mehl
  3. Öl (zum Braten)
  4. Möhren
  5. Äpfel
  6. Joghurt oder vegane Mayo (für den Salat)

Instructions

  1. Wash and peel 4-5 medium potatoes thoroughly. Grate the potatoes using a box grater or food processor, placing the shredded potatoes into a clean kitchen towel.
  2. Squeeze out excess moisture from the grated potatoes by twisting the kitchen towel. Transfer the dried potato shreds into a mixing bowl.
  3. Add 3-4 tablespoons of flour, 1 beaten egg, salt, and pepper to the potato mixture. Mix well until the ingredients are evenly combined.
  4. Heat vegetable oil in a large skillet over medium-high heat. Use enough oil to cover the bottom of the pan generously.
  5. Form the potato mixture into flat, round patties about 10 cm in diameter and 1 cm thick. Carefully place the patties into the hot oil.
  6. Fry the Kartoffelpuffer for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels to remove excess oil.
  7. For the salad, peel and julienne 2 medium carrots and 1 apple. Mix with yogurt or vegan mayo, adding a pinch of salt and pepper.
  8. Assemble the burger by placing a crispy Kartoffelpuffer as the base, topping with the carrot-apple salad, and adding another Kartoffelpuffer on top.
  9. Serve immediately while the Kartoffelpuffer are still hot and crispy, with additional salad on the side if desired.

Tips

  1. • Always squeeze out maximum moisture from grated potatoes to ensure super crispy patties • Use medium-high heat for perfect golden-brown exterior • Don't overcrowd the pan when frying to maintain optimal crispiness • For extra flavor, add finely chopped herbs like chives or parsley to the potato mixture • Serve immediately to enjoy the maximum crunch of the Kartoffelpuffer • Use starchy potatoes like Russet for the best texture and binding • If you're dairy-free, coconut or almond yogurt works great as a mayo substitute
