Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Cuisine: Italian
Serves: 4 servings

Ingredients

  1. 300g pasta
  2. 250g cherry tomatoes
  3. 1 can tuna in olive oil
  4. 2 cloves garlic
  5. 2 tablespoons olive oil
  6. Salt to taste
  7. Black pepper to taste
  8. Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (400°F). This will prepare your oven for roasting the cherry tomatoes.
  2. In a large baking dish, place the 250g of cherry tomatoes. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper to taste. Toss gently to coat the tomatoes evenly.
  3. Roast the cherry tomatoes in the preheated oven for about 15-20 minutes, or until they are blistered and caramelized. Stir halfway through to ensure even roasting.
  4. While the tomatoes are roasting, bring a large pot of salted water to a boil. Add 300g of pasta to the boiling water and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining the pasta.
  5. While the pasta cooks, peel and finely chop the 2 cloves of garlic. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped garlic and sauté for about 1-2 minutes, or until fragrant, being careful not to burn it.
  6. Open the can of tuna in olive oil and drain it slightly, reserving a little of the oil if desired. Add the tuna to the skillet with the sautéed garlic, breaking it up gently with a fork. Cook for an additional 2-3 minutes to heat through.
  7. Once the cherry tomatoes are roasted, add them to the skillet with the tuna and garlic. Stir gently to combine, allowing the flavors to meld together.
  8. Add the drained pasta to the skillet, tossing everything together. If the pasta seems dry, gradually add some of the reserved pasta water until you reach your desired consistency.
  9. Season the pasta with additional salt and black pepper to taste. Toss in freshly chopped parsley for garnish.
  10. Serve the roasted cherry tomato and tuna pasta hot, garnished with more fresh parsley if desired. Enjoy your delicious Italian meal!

Tips

  1. Choose the Right Pasta: Opt for pasta shapes that hold sauce well, like fusilli or penne, to maximize flavor in every bite.
  2. Roast to Perfection: Keep an eye on the cherry tomatoes while they roast. The goal is to achieve a blistered, caramelized exterior that enhances their natural sweetness.
  3. Don't Skip the Pasta Water: Reserve some pasta water before draining; it’s starchy and can help create a silky sauce that clings beautifully to the pasta.
  4. Sauté Garlic Carefully: Garlic can burn quickly, so sauté it on medium heat and keep stirring to release its aromatic flavor without turning it bitter.
  5. Fresh Herbs Matter: Garnishing with fresh parsley not only adds a pop of color but also a burst of freshness that elevates the dish.
  6. Add a Twist: For an extra kick, consider adding a pinch of red pepper flakes or a squeeze of lemon juice just before serving to brighten the flavors.
  7. Serve Immediately: This dish is best enjoyed fresh, so serve it right after mixing for that perfect blend of flavors and textures.
