Total Time: 15 mins
Cuisine: Mexican
Serves: 4 servings

Ingredients

  1. 2 ripe avocados
  2. 1 head garlic, roasted
  3. 1 lime, juiced
  4. 1/4 cup chopped cilantro
  5. 1/2 teaspoon salt
  6. 1 small onion, diced
  7. 1 tomato, diced

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the top off the garlic head, exposing the cloves. Drizzle with a small amount of olive oil and wrap in aluminum foil.
  2. Roast the garlic in the preheated oven for 35-40 minutes until the cloves are soft and golden brown. Remove from oven and let cool for 10 minutes.
  3. While the garlic is roasting, prepare the other ingredients. Dice the onion and tomato into small, uniform pieces. Chop the cilantro finely.
  4. Cut the avocados in half, remove the pits, and scoop the flesh into a medium mixing bowl.
  5. Squeeze the roasted garlic cloves out of their skins directly into the bowl with the avocados. The cloves should be soft and easily spreadable.
  6. Add lime juice, salt, diced onion, diced tomato, and chopped cilantro to the bowl.
  7. Mash the ingredients together using a fork or potato masher, maintaining a slightly chunky texture. Mix until well combined but not completely smooth.
  8. Taste and adjust seasoning, adding more salt or lime juice if needed.
  9. Cover the guacamole with plastic wrap, pressing it directly onto the surface to prevent browning, and refrigerate for 15 minutes to allow flavors to meld.
  10. Serve chilled with tortilla chips, as a side dish, or as a topping for tacos or other Mexican-inspired dishes.

Tips

  1. Choose perfectly ripe avocados: Look for ones that yield slightly to gentle pressure but aren't mushy.
  2. Roasting garlic is key: Don't rush the roasting process. The slow roasting brings out incredible sweetness and reduces the sharp raw garlic bite.
  3. Keep it chunky: When mashing, leave some texture for a more authentic, rustic guacamole experience.
  4. Prevent browning: Always press plastic wrap directly onto the guacamole's surface to minimize oxidation.
  5. Serve immediately after chilling for the best flavor and texture. The 15-minute rest allows the ingredients to meld beautifully.
  6. For extra heat, consider adding a finely diced jalapeño or a pinch of cayenne pepper.
  7. Use fresh lime juice - bottled just doesn't compare in brightness and flavor!
